1lb fresh boneless salmon fillet
2 tbsp. olive oil
1 lg egg (lightly beaten)
2 tbsp. mayonnaise
2 tbsp dijon mustard
6 tbsp breadcrumbs
3tbsp chopped parsley
salt & pepper
Mix everything (except 1 tbps oil). Form mixture into small patties. Heat 1 tbsp in a frying pan. Cook until golden brown, about 2 mins on each side.
